In addition to the produce we grow ourselves in our vegetable and herb gardens, produce is sourced locally from organic / free range / grass fed farms, including Tree and Twig Heirloom Vegetable Farm and Goshen Farms in Wainfleet, and Lake Land Meats in St. Catharines.

Specialty ingredients are sourced from local, independently owned and operated businesses, including Dinh Dinh Asian Foods and El Milagro in St. Catharines.
Environmental Responsibility
On board el gastrónomo, we us only biodegradable or recyclable service items supplied by GreenShift's Green Supply House. This includes plates made of sugarcane, utensils made of potato starch, and cups made from sustainable plant-based resin, as well as recyclable napkins made of at least 70% post-consumer recycled material.
In addition, cleaning supplies used on board el gastró are all either: 100% plant-based, certified eco-friendly, biodegradable, made of post-consumer recycled materials, or a combination of the above.
Organic waste is composted daily to be used in our vegetable and herb gardens, from which we harvest produce for el gastró.
Finally, used vegetable oil is turned into biofuel locally for distribution to farms where equipment has been converted to run on biofuel.
